Tuna Cakes

I have like 20 other posts that are waiting to be published. But I made this tonight and it was so good I wanted to share it immediately.

We are seriously past grocery day and I was too lazy to go to the store, so I went to one of those websites where you put in all the ingredients you have in your fridge and it gives you recipe possibilities.

Well, needless to say....I have a ton of tuna and thought , "hey if this is gross I'll make tuna sandwiches."

So. Not. Gross.

The base of this recipe is literally tuna, eggs, and breadcrumbs...but that sounds seriously boring.
So I doctored it up a bit.

Please make this...someday when you are searching your cupboards looking for something other than crackers and water.

Try these tuna cakes. They are definitely going on my list of recipe staples.

Tuna Cakes

Ingredients:
2 cans tuna
2 eggs
3/4 cup home style stuffing
2 tsp. Dijon style mustard
3 tsp. Teriyaki sauce
2 garlic cloves, minced
Salt and pepper

Directions:
Mix all the ingredients in a bowl. Salt and pepper to taste. Form 4 tuna patties and fry in sesame oil (or any cooking oil, that's just what I had) until golden on both sides.

I served with brown rice and topped with sweet chili sauce. It was a slightly Asian tasting meal. Super tasty served this way.

I kind of want to go make these right now.

Asian Ground Beef

I'm always looking for different recipes that use ground beef. I feel like ground beef is often times so...blah. Spaghetti, hamburgers, tacos...blah blah blah.

Those meals are normal -- thoughtless even. Don't get me wrong...those meals are on my dinner table more often than not. But sometimes I want my ground beef to be different.

Give me some variety!

Well here it is. I found a ground beef recipe that isn't your everyday meal.

I found this recipe on pinterest, but didn't have every ingredient on hand. So I just adapted it to my tastes. It turned out really good!

Just brown some beef (with lots of garlic of course.) Sauté the beef with the sauce. Serve over rice. (I kind of stink at making rice so I buy those "steam in the microwave" bags. So worth it.)

And hey, why not toss some cilantro on top. Who says you can't have it all?

Asian Ground Beef

Ingredients:
1 lb ground beef
1/3 cup brown sugar
1/2 cup teriyaki sauce
3 cloves of garlic, minced
1 tsp fresh ginger, minced
1 tsp crushed red pepper
salt and pepper
cilantro (optional)

Directions:
In a large skillet, brown hamburger with garlic. Season with salt and pepper. Drain the fat and then add brown sugar, teriyaki, ginger, and red pepper. (I mixed up the sauce before adding it to the beef.) Simmer for a few minutes to blend the flavors. Serve over rice and top with cilantro.

This should be your new everyday meal.
